Today we are making Mattar Paneer Curry, which is a Vegetarian Indian dish! Not sure what Mattar Paneer is? Mattar paneer is a vegetarian Indian curry made with peas and paneer which is a type of soft Indian cheese and it's DELISH!!! It is often served with rice and Naan. The dish is made by simmering peas and paneer in a spiced tomato sauce. Mattar paneer is a popular dish in North India, which is where my husband Sukrit is from. My kids LOOOVVVEEEEE this dish!!! If you are serving Indian food to someone for the first time, I prefer to make this dish!! Hope you try and enjoy!!
Utensils:
~ Your fav pan to cook in
~ something to stir with
~ water for deglazing
Ingredients:
2~ medium tomatoes chopped
1~ Large onion chopped
1~ block Paneer~ most stores sell the same size block BESIDES Costco. You'll know when you cut it up how much will feed your family adequately.
1~ bayleaf
Oil~ your choice of what you use daily
1 tablespoon ~ginger/garlic paste or a bit chopped of both
Salt to taste
1/2 tablespoon~ turmeric
1/2 tablespoon~ coriander
1/2 tablespoon~ garam masala
~ Kashmiri Mirch (chilli powder) OPTIONAL, per your spicy level
1 cup~ Peas (Frozen or fresh)
Water~ as needed

Super Quick and easy Hard-Boiled eggs in the Instant Pot. They peel so easy!
Items/Ingredients needed:
~Instant Pot
~IP steamer/roaster rack insert
~ Bowl with ice and water
~eggs- as many as you prefer that will fit single layer in the pot on the trivet.
~ 1 cup water
Steps:
~ Load eggs single layer on the rack in bottom of Instant Pot
~ pour in water
~ close and have lid in sealed position
~ pressure cook high for 6 minutes.
~once it hits the 6 minutes let pressure for 6 more minutes
~ after the 6 min vent what air is left
~open and remove eggs. I set them in ice water to cool enough for me to store in fridge

Try this Step By Step Saag Paneer Instant Pot Recipe, it's easy, quick and delicious!
This Saag Paneer is so creamy and smooth and dairy free?!. Saag is the Hindi word for Spinach and Paneer is an Indian cottage cheese. Saag Paneer is an amazingly delicious and healthy Indian curry and is a Punjabi favorite. It's made with your choice of greens, typically spinach, mustard greens or I use the Costco Power Greens and then added with paneer or you could use tofu. This recipe is VERY easy to make and time saving in the Instant Pot. You can serve with some basmati rice or some Indian breads like Naan.
This recipe is better than the restaurant styles and you can pretty much sub all ingredients with your favorites! I'd love to know if you try it!
Recipe Ingredients:
~Instant Pot or Pressure Cooker
~Immersion Blender
~ 2 Tablespoons of Olive Oil
~ 1 tablespoon Ghee or butter
~ 2 teaspoons of cumin seeds
~ 1 green chilli OPTIONAL
~1 inch ginger root, finely chopped
~ 2 cloves garlic chopped (The ginger and garlic chopped can be subbed with ginger garlic paste- 1tablespoon)
~ 1 large onion chopped
~1 teaspoon of salt
~1 to 2 teaspoon Garam Masala per your taste
~1 teaspoon turmeric
~ 1 teaspoon ground cumin/ cumin powder which ever you have
~ 1 teaspoon Kashmiri Mirch (Red chilin Powder) Optional
~1-2 cups water for cooking and for deglazing
~ 1/2 bag of Costco Power greens 12oz, or 12 oz of your choice greens-spinach
~ 8-12 oz Paneer or Tofu of your choice

This is SUCH a delicious bread! Sukrit, my husband, has always loved anything walnut. He's been asking me for some walnut bread and so it was time i figured out a good and EASY recipe! This did the trick! YUMMMMMMM
Ingredients:
12 oz dates...(3/4 cup) chopped
2 cups flour
2 tsp baking soda
1 1/2 tsp cinnamon
pinch of nutmeg
1 1/2 cups vegetable oil
1 cup brown sugar
1/2 cup honey
4 eggs
2 tsp vanilla
1 cup chopped walnuts save some for the top IF you want to add them.
Preheat oven to 350 degrees
In mixing bowl add together flour, baking powder, cinnamon and nutmeg.
In another mixing bowl whisk together vegetable oil, brown sugar, honey, eggs and vanilla.
Pour dry ingredients into the wet, still until a thicker mix forms.
Fold in the chopped walnuts and dates.
Grease loaf pan and add the batter.
Top with chopped walnuts (OPTIONAL)
Place loaf into pre-heated oven and cook for an hour. Use a toothpick to make sure the middle is cooked at about 50 minutes.
Once fully cooked, remove from oven and set to cool thoroughly. Cut and serve.

Hello! Welcome back to Masala With A twist the cooking Podcast!
This is a basic recipe for a side of Green beans.. many ways you can do them but this is the one my kiddos like the most :) Needs just a couple ingredients and it's SUPER simple!
Ingredients:
~ Green Beans (whatever amount you typically use for yourself/family)
~ salt to taste
~ onion (as much or as little as you like)
~ oil
Directions:
~ Chop onions
~ cut green beans into smaller lengths
~ add oil to pan and start sautéing the onion when the pan is hot. Saute until the onion gets soft
~ once onion is soft add the green beans
~ add some salt as you cook
~ saute green beans until they are the desired crunchy/softness you like
~ salt to taste and serve!

Hello! Welcome back to Masala With a Twist...the cooking Podcast!
Ingredients:
~ 9x13 pan
~ 2 jars of sauce (any kind, whatever you like)
~ 1 or 2 packages of frozen ravioli...I had the large bag which equalled to about 2 bags
~ shredded cheese~ 3-4 cups or about 2 packages..parmesan or mozzarella..feel free to mix the two
~ ground meat (optional)
Instructions:
~ Preheat oven to 400 degrees
~ start with the sauce and pour it in the bottom of the pan, just a light coating
~ next add a layer of raviolis all across the bottom
~ add another layer of sauce
~ if using ground meat you would add some here otherwise skip ~ add some shredded cheese
~ add another layer of ravioli
~ add sauce
~ add cheese
Keep up the layering for about2 or 2 layers...
~ Next, be sure the shredded cheese is last on top, cover with foil
~ Cook for 30 min or until you see bubbling of the sauce
~ at 30 min remove foil and cook for 10 to slighting brown and melt the cheese on the top
Serve up with some salad and/or bread! Enjoy!

This is a staple in our house! I usually have it made for any company coming from India and they LOVE it! We don't use dairy in it much since my kids and husband are lactose intolerant.
Ingredients:
~1.5 Cups Black Urad Dal ( rinsed and strained )
~ 1/2 cup red kidney beans (not canned)
~ 2 medium tomatoes pureed
~ 1 large onion pureed
~ 1 tablespoon ginger garlic paste (or 1/2 tablespoon crushed garlic and 1/2 Tablespoon of crushed ginger)
~ 8 - 10 cups water
~ 2 teaspoon ground Coriander
~ 2 teaspoon ground Cumin
~ 2 teaspoon salt
~ 2 teaspoons Garam Masala
~ Box of MDH Dal Makhani spice (use amount needed per taste)
~ 1 teaspoon chili powder / kashmiri mirch
~ 2 teaspoon turmeric
~ 2 tablespoons butter or Ghee

I've finally been able to find a perfect version that is quick! This recipe is VERY easy to make and saves so much time in the Instant Pot.
Recipe Ingredients: This recipe feeds about 4-6
~Instant Pot or Pressure Cooker
~ pan to heat and fry onions in 1 1/2 large onions sliced thin
~ 2 cups oil (your choice)-to fry onions
~ 2 Tablespoons of Olive Oil
~ 4 Green Cardamom pods
~ 10 or so black peppercorns (per your taste)
~ 4 Cloves
~ 1 cinnamon stick
~1 inch ginger root, finely chopped
~ 2 cloves garlic chopped (The ginger and garlic chopped can be subbed with ginger garlic paste- 1tablespoon)
~ 1-2 sprigs of Mint chopped
~1-2 Sprigs of cilantro chopped
~ 2 lbs skinless chicken of choice- (legs, drumsticks, thigh, bone in or out)
~ 2 cups basmati rice- rinsed and drained
~ 2 cups water
~ 1 tablespoon of salt
~ 2 teaspoon Garam Masala per your taste
~ 2 teaspoons coriander powder
~ 2 teaspoons cumin powder
~1 teaspoon turmeric

Air Fryer~Flavorful Bhindi aka Oakra
This Bhindi is a favorite dish for our family! We typically serve it as an appetizer or a side dish! It can be made on the stove or the air fryer...we always opt for the air fryer so they turn out a little more crispy! This recipe is very easy and QUICK! Follow along step by step because I'd love to know if you try it!
Recipe Ingredients:
~ Air Fryer
~ baggie
~ 1 pound of Bhindi (Oakra) sliced in half lengthwise with tops cut off
~ 2 Tablespoons of Olive Oil
~1 teaspoon of salt
(Now at this point if you prefer NON-INDIAN flavors add what ever spices YOU like...it will turn out great! )
~1 tablespoon Garam Masala (or more per your taste)
~1 teaspoon Turmeric
~ 1 teaspoon Ground cumin/ cumin powder which ever you have
~ 1 teaspoon Kashmiri Mirch or Red Chili Powder
~ 1 tablespoon Mango powder
~ 1 tablespoon Coriander powder
Mix all ingredients in the baggie. Set air fryer to 390 degrees, once your fryer says it's ready for food add in and cook 10 minutes to start. Check them and if still too soft keep going 2 minutes at a time until desired crispness.
