03 X 171 Dining with Donna 38: BBQ Bacon Burgers
BBQ Bacon Burgers What You Will Need: Measuring spoons measuring cups 1 grill 1 pastry brush Paper towels Ingredients: 1 ½ pounds of ground round ¼ teaspoon of salt ¼ teaspoon of freshly ground pepper ½ cup of barbecue sauce, divided 4 slices of white Cheddar cheese 4 sesame seed hamburger buns 8 cooked bacon slices Cooking Directions: Preheat grill to 350 to 400 degrees (medium-high) heat). Shape beef into 4 (4 inch diameter) patties. Sprinkle with salt and pepper. Place patties on cooking grate of grill; brush with 2 tablespoons of barbecue sauce. Grill, covered with grill lid, 5 minutes. Turn patties over; brush with an additional 2 tablespoons of barbecue sauce. Cook 5 minutes, or until beef is no longer pink in the center. Top each burger with 1 slice of cheese. Grill, covered with grill lid, 1 minute, or until cheese melts. Place 1 patty on bottom half of each bun. Top each with bacon and barbecue sauce. Top with bun. Notes: Toast buns on grill; a swipe of melted butter makes them crispy. Grill a sliced Vidalia onion on the grill alongside the burgers for an extra topping. Lettuce, tomato and pickles would also pare well with these burgers. Makes 4 servings. Helpful Hints: Peeled Too Many Potatoes? * Submerse them in cold water to which a few drops of vinegar have been added. Keep refrigerated and they will last for 3 to 4 days. * Leftover baked potatoes will sour quickly if stacked together in the refrigerator. How to keep Garlic fresh as the day you bout them? * Garlic cloves will never dry out if you store them in a bottle of cooking oil. 03 X 165 Dining with Donna 37: Asian Calamari and Citrus Salad
Asian Calamari And Citrus Salad What You Will Need: Measuring cups Measuring spoons 1 sharp kitchen knife for slicing 1 greater 1 knife for pealing Mixing bowls 1 whisk 1 shallow dish or large freezer bag a cooking grate Paper towels Ingredients: 3 naval oranges ¼ cup of olive oil ¼ cup of red curry paste ¼ teaspoon of salt ¼ teaspoon of pepper 1 pound package of cleaned calamari (tubes and tentacles), rinsed Cooking spray 1 cup of thinly sliced red onion Fresh cilantro leaves Cooking Directions: Grate orange peel zest to 1 teaspoon. squeeze juice from 1 orange to obtain 1 third cup of juice Peel and section remaining 2 oranges. Coarsely chop sections. Whisk together orange zest, orange juice, olive oil, red curry paste, salt and pepper in a bowl and reserve 3 tablespoons mixture for later use. Pour remaining marinade into a large shallow dish or zip-top plastic freezer bag; add calamari. Cover or seal and chill 2 hours, turning occasionally. Remove calamari from marinade, discarding marinade. Coat a cold cooking grate with cooking spray, and place on grill. Preheat grill to 400 to 450 degrees (high) heat. Grill calamari tubes and tentacles, without grill lid, 4 minutes, or until firm, turning once. Place calamari in a large bowl; add red onion, cilantro, chopped orange sections and reserved 3 tablespoons marinade; toss gently. Notes: Red curry paste gives this marinated calamari a huge flavor boost. This dish is great hot off the grill or chilled. Shrimp can be substituted for the calamari, if you prefer. Makes 4 servings. Tips and helpful hints: Keeping Food Fresh: Lettuce And Celery: * Lettuce and celery will keep longer if you store them in the refrigerator in paper bags instead of cellophane ones. Do not remove the outside leaves of either until ready to use. * Lettuce won't rust as quickly if you place a paper towel or napkin in the storage container. * Line the bottom of the vegetable compartments with paper toweling. This absorbs the excess moisture and keeps all fruits and vegetables fresher for a longer period of time. Sprouting Onions: * To keep dry onions from sprouting and becoming soft, wrap individually in foil. They will stay firm for some time. *****Important notice from Donna J. Coq au Vin What You Will Need: Measuring cups 1 sharp kitchen cutting knife 1 mincer measuring spoons 1 bottle opener 1 can opener 1 crock-pot 1 ladle 1 mixing bowl 1 mixing spoon paper towels Ingredients: 2 cups of frozen pearl onions, thawed 4 slices of thick-cut bacon, crisp cooked and crumbled 1 cup of sliced mushrooms 1 clove of garlic, minced 1 teaspoon of dried thyme 1/8 teaspoon of black pepper 6 boneless, skinless chicken breasts (about 2 pounds) ½ cup of dry red wine ¾ cup chicken broth ¼ cup of tomato paste 3 tablespoons of all-purpose flour Hot cooked egg noodles, optional Cooking Directions: Layer onions, bacon, mushrooms, garlic, thyme, pepper, chicken, wine and broth in a Crock-Pot. Cover; cook on low for 6 to 8 hours. Remove chicken and vegetables into a sealable container. cover container and keep warm. Ladle 1/2 cup cooking liquid into small bowl; cool slightly. Mix reserved liquid, tomato paste and flour until smooth; stir into Crock-Pot. Turn Crock-Pot to high. Cook, uncovered, for 15 minutes, or until thickened. Serve over hot noodles, if desired. Academy Award (also listed as Academy Award Theater) is a CBS radio anthology series, which presented 30-minute adaptations of plays, novels, or films. Dramas were presented in which actors recreated their original film roles included Henry Fonda in Young Mr. Lincoln, Humphrey Bogart in The Maltese Falcon, Cary Grant in Suspicion, Gregory Peck in The Keys of the Kingdom , and Ronald Colman in Lost Horizon. 03 X 156 Dining with Donna 35: Chipotle Cornish Hens
Chipotle Cornish Hens What You Will Need: a kitchen knife for cutting vegetables or a vegetable cutter a can opener Measuring cups A crock-pot a small mixing bowl a skewer or kitchen fork a serving platter a slotted spoon paper towels Ingredients: 3 small carrots, cut into ½ inch rounds 3 stalks celery, cut into ½ inch pieces 1 onion, chopped 1 can (7 ounces) of chipotle peppers in adobo sauce, divided 2 cups prepared cornbread stuffing 4 Cornish hens (about 1 1/2 pounds each) Salt and black pepper Fresh parsley, chopped, optional Cooking Directions: Coat inside of Crock-Pot with nonstick cooking spray. Add carrots, celery and onion. Pour canned chipotles into small bowl. Finely chop 1 chipotle pepper. Remove remaining peppers from adobo sauce and reserve for another use. Mix half of chopped chipotle pepper into prepared stuffing. Add remaining half of chopped chipotle pepper to adobo sauce. Rinse and dry hens, removing giblets if any. Season with salt and black pepper inside and out. Fill each hen with about 1 cup of stuffing. Rub adobo sauce onto the hens. Place in Crock-Pot, arranging hens neck down and legs up. Cover; cook on high for 3 and a half to 4 and half hours, or until hens are cooked through and tender. Transfer the hens to a serving platter. Remove vegetables with slotted spoon; arrange around the hens. Garnish with parsley. Spoon the cooking juices over the hens and vegetables, if desired. Note: For spicier flavor, use 1 chipotle pepper in the stuffing and 1 chipotle pepper in the sauce. Chipotle peppers can be very spicy. Until you know how much spiciness you prefer, use the smaller quantities recommended in recipes. You can always add more the next time you prepare the recipe. Makes 4 servings. On today’s Afternoon Radio Theater Sundae, Pepsi-Mama takes you down the immigrant highway with the show, “Life with Luigi”. Life with Luigi is an American radio situation comedy series which began September 21, 1948, on CBS Radio and broadcast its final episode on March 3, 1953. The action centered on Luigi Basco and his experiences as a newly arrived Italian immigrant in Chicago. Many episodes took place at the night school classes that Luigi attended with other immigrants from different countries. Another common theme involved Luigi's landlord/sponsor, Pasquale, scheming to get Luigi to marry his obese daughter. [1] Perennial character actor and two-time Academy Award nominee J. Carrol Naish played Luigi. Life with Luigi was created by Cy Howard, who had earlier created the hit radio comedy, My Friend Irma. The working title was The Little Immigrant, echoed in the sign-off of each episode, "Your lovin-a son-a, Luigi Basco, the li'l immigrant." Other characters on the show included Pasquale (Alan Reed), another Italian immigrant who is always trying to trap Luigi into marrying his daughter Rosa ( Jody Gilbert); native Chicagoan Jimmy ( Gil Stratton), Luigi's young business associate; Miss Spaulding (Mary Shipp), Luigi's night school teacher and ideal woman; and Schultz (Hans Conried), a German immigrant and fellow student in Luigi's citizenship class. Each episode used the framing device of Luigi narrating a letter to his mother back in Italy. The show was popular, successfully competing with Bob Hope 's The Pepsodent Show . For most of its run, Life with Luigi aired at 9 pm on Tuesdays. Despite an estimated 30% share of the audience in its timeslot, the show was without a sponsor [3] until Wrigley's Gum bought it in 1950, continuing till the show ended in 1953.
