Laura Burns, Ph.D. is the Director of Research and Development at Omega Yeast. After studying stress responses in Saccharomyces cerevisiae for her graduate thesis at Vanderbilt University, she decided the best place to apply this knowledge was in brewing. She worked in production brewing for five years as Head Brewer and Director of Quality Assurance before heading back to the bench at Omega Yeast. Her undeniable curiosity drives her to tackle difficult questions that brewer’s face daily.

Technical Sales Manager for the home segment at Fermentis, Hugo Picard is in charge to support homebrewers, winemakers, cidermakers, in their hobby for beverage production at home. Hugo graduated with a Master’s in Science and Agricultural Engineering from ISA Lille in France. He also acquired a Master’s degree in International Marketing and Communication at Lille University. Before joining Fermentis, he has been president of a brewing and winemaking association and worked in several breweries and brewpubs in France and New-Zealand as a brewer or as a marketing/communication associate.

Episode 69: Small-Scale Lagering

Lagers have been having a moment for a long time now. In this current age of brewing, there are many small breweries that are giving the time and attention to making lagers of note. We have two guests here that will explain how to best approach the style, and bring great pints to your patrons.


Andreas Miller has over 20 years of experience in the brewing industry, and has been an adjunct instructor, consultant, and one of the brewers for the Siebel Institute's pilot and research brewing department since 2023. A graduate of Doemens Akademie in Munich, Andreas has worked as a brewmaster for a number of breweries large and small internationally, and provided consulting services for many breweries worldwide. His expertise covers practically every phase of brewing, packaging, and engineering operations, along with troubleshooting.

Daren Orr and business partner Matt Bartle decided that the town of South Hero, Vermont, would benefit from a public house with community (and great beer) at the forefront. While watching the brewery market for over a decade, they believed that a small town nano brewpub would be a stable model to both produce beer and run a local restaurant so opened Two Heroes Brewery in 2020 and expanded to their current brewpub public house in 2023. They believe that community is the most important aspect of the town and they serve to fill the void for a local gathering place for community members and visitors alike. And in keeping with the theme this month, they are brewing some lagers of note.

Lindsay Barr is the CSO and Founding Partner of DraughtLab Sensory Software where she helps food & beverage companies use tasting technology to make products that people love.  After earning a Masters in Food Science from UC Davis, she began her career at New Belgium Brewing Company managing the Sensory and Consumer Research program. Along with her work at DraughtLab, she teaches Sensory for the Master Brewers course at UC Davis and the Siebel Institute and judges global beer competitions. During her career, she has published numerous groundbreaking techniques to lower the barrier-to-entry into sensory science and continues to be passionate about making sensory accessible for all businesses. She currently lives in San Francisco and can be found running or lounging in Golden Gate Park, sailing, or playing around in the Castro.

For the last 29 years Ashton Lewis has worked for Brew Your Own Magazine as technical editor and “Help Me, Mr. Wizard” columnist.  His day job since December 2016 has been with RahrBSG where he is currently Manager of Training and Technical Support.  Prior to working in the world of ingredients, Ashton was the Staff Master Brewer and Brewing Group Sales Manager for the Paul Mueller Company living in the world of custom stainless steel.  He was also a partner in the Springfield Brewing Company (SBC) in Springfield, Missouri, and SBC’s master brewer from 1997 to 2019.  Ashton holds a B.S. in Food Science from Virginia Tech (1991) and a M.S. in Food/Brewing Science from UC Davis (1994), and is currently the MBAA District Great Plains Technical Chair.  In his spare time, he enjoys music, cooking, homebrewing, talking about beer, and playing with Excel.

So, how can anyone plan when the global supply chain is changing minute by minute? On this epidode we talk about how to budget for the unknown.

 
The last few months have seen a fire hose of news coming out of Washington D.C., a lot centered around tariffs and global trade. Admittedly, it’s difficult to do a show on the topic because of the chaotic nature of the rollout from the White House and how seemingly concrete plans crumble minutes after they are announced. 


This obviously creates uncertainty in the markets and on main street. This episode features two conversations that center around what might be coming and how to best prepare. Episode 63: Strategies for Embracing Beer Holidays

How can your brewery make the most out of the holidays? More than just slinging stout on St. Patrick’s Day, or a festbier during Oktoberfest, there are ways to create a welcoming vibe that will get people coming back year after year and can establish your brewery as a hospitable spot.

One person who has been working to crack the code is Sam McNulty. He has developed and operates seven restaurants and breweries on West 25th Street in the Ohio City neighborhood of Cleveland's Near West Side. 

Three of these concepts are brewpubs of vastly different scale: One a nano brewery where experimental beers are concocted, while another is a brewpub restaurant with close to five hundred seats, and in 2016 he rebuilt a 43,000 square foot warehouse that dates back to the 1800s and launched a full-scale production brewery sending Market Garden Brewery beers out across Northeast and Central Ohio.


He has lived largely car-free in Ohio City for the past 20+ years. And one of his guiding investment principles is to nest his businesses within a 15-minute bicycle ride from the Market Garden Brewery. As one of his former professors once said: “Sam is a beer entrepreneur fermenting the rise of a post-industrial frontier with opportunity galore. Sam is building on the Pride of Cleveland.”

Episode 62: A Brewer's Guide to Mental Health

While it is rewarding and exciting to own a small brewery, there is also a lot of worry that comes with it. Over time things can snowball, accumulate, and become a burden. Regular check-ins on mental health are important, and no matter who you are in the brewing space, or your role, taking care of yourself is paramount. That’s the focus on this episode. 

Everyone is feeling the stress these days. From outside influences to internal worry, everyone is carrying a lot of weight on their shoulders. If you’re running a small business, the worry of your staff is on you as well. While there are many things in our control, there are also a lot of things that are simply not easily dealt with. Finding balance from within and managing what you can is important to mental health. Being pulled in a dozen different directions all at once rarely brings calm, but by focusing on what you can control and finding the moments - or longer - to take a break adds up to a better human experience. Of course there are other considerations to mental health in the beer space, and other challenges to navigate. 


To get a better understanding on what is available out there and how to best access it, we're pleased to be joined by J Jackson-Beckham, the Director of Member Resources for the Brewers Association, better known in the industry as Dr. J.


A former professor of Communication Studies, Dr. J dedicated her academic career to the study of American beer. She is an author, speaker, vocal advocate for the craft beverage community, homebrewer, and Certified Cicerone. In 2018, Dr. J was named the Brewers Association's first-ever Diversity Ambassador. In 2020, she was named Imbibe Magazine's Beer Person of the Year. Dry January is upon us and showing no signs of leaving the calendar anytime soon. So what is a small brewery to do? There are options when it comes to making or serving low or no-alcohol options. On this episode, experts from the field weigh in.


Richard Priess is cofounder of Escarpment Laboratories, a yeast producer and developer in Guelph, Ontario. Richard graduated from the University of Guelph with a Masters of Science in Molecular Biology & Genetics. Richard leads the company's product and business developments. He has also contributed to publicly available brewing science research on a variety of topics including kveik yeast, yeast hybridization, and Brettanomyces. His favorite beer styles are German Pils and Saison.


ABV Technology CEO Ben Jordan. Founded in 2017, ABV Technology makes products and services for the craft beverage industry to create flavorful and high quality reduced and non-alcoholic beverages.


Nate Anderson spent almost 20 years teaching physics and basic chemistry at the high school and college level before finding himself on the brew deck of a small brewery in northern Minnesota.. This is always a good time to reflect and get excited about a new calendar year. To help put the industry into perspective and to think about how to strengthen beer in the year to come, I’ve asked three smart and plugged in folks to share their insights, knowledge, and even offer some homework. If you’re a small brewer navigating these tough craft beer waters, there’s a lot you can learn and hopefully take to heart.

Steve Parkes. He is the owner and lead instructor at the American Brewers Guild Brewing school in Vermont. He graduated from Heriot-Watt University, with a degree in Brewing Science in 1982 and has spent the last 42 years working in small and medium sized breweries on both sides of the Atlantic. He has built breweries from scratch using both used and new equipment, and has years of experience in practical problem solving. He has been a regular speaker at the annual Craft Brewers Conference, is a veteran GABF and World Beer Cup judge, held office at the regional level with MBAA, and at a national level with the AOB board of advisors. In 2009 he was the recipient of the Association of Brewers Russell Scherer award. He is also the owner of Drop In Brewing in Middlebury Vermont.

Laura Lodge began her craft beer journey in the distribution tier in the late 1990s working with a small, independent distribution company in the mountains of Colorado. As anyone in small business knows, “everything” is your job description. She shares her experience to benefit the artisanal/craft business owner in Distribution Insight for the Craft Brewer. Today, Laura is the owner of Customized Craft Beer Programs, a consulting business offering insight and assistance with all things craft beer. With experience over all 3 tiers, she has consulted for breweries and distributors, created retail programs for destination resorts, is the Executive Director for the well-known Big Beers, Belgians & Barleywines Festival held in the Colorado Rocky Mountains each year (pre-pandemic), and has participated with the creation and production of educational & experiential craft beer events throughout the country. During the pandemic, Laura became the Co-Founder of Start A Brewery, LLC, a business created to help dreamers, breweries in planning, and growing breweries by pulling together a community of savvy industry professionals and resources across the brewing industry. For the last 29 years Ashton Lewis has worked for Brew Your Own Magazine as technical editor and “Help Me, Mr. Wizard” columnist. His day job since December 2016 has been with RahrBSG where he is currently Manager of Training and Technical Support. Prior to working in the world of ingredients, Ashton was the Staff Master Brewer and Brewing Group Sales Manager for the Paul Mueller Company

living in the world of custom stainless steel. He was also a partner in the Springfield Brewing Company (SBC) in Springfield, Missouri, and SBC’s master brewer from 1997 to 2019. Ashton holds a B.S. in Food Science from Virginia Tech (1991) and a M.S. in Food/Brewing Science from UC Davis (1994), and is currently the MBAA District Great Plains Technical Chair. In his spare time, he enjoys music, cooking,

homebrewing, talking about beer, and playing with Excel.

There is uncertainty in the beer industry these days and if you’re a small brewery owner you might feel like you’re alone in the issues and struggles facing your small business. You’re not. On this episode we’ll check in with two small breweries on how they are operating, getting help, solving challenges, and looking forward.

Celebrating six years in operation, Slate Town Brewery in Granville, New York has been through a lot in a short time. Owner Susan Knapp is here to talk about the early days, the help she’s received along the way, and advice and changes that have helped keep the doors open. Slate Town is a small New York State Farm Brewery dedicated to brewing outstanding, small-batch beer using local, seasonal ingredients. 


Twisted Fate Brewing is a small Nano-brewery taproom in Danvers, Massachusetts managed by Head Brewer and Co-Owner David Pinette.  Helping to run the business side of the brewery is David’s wife Erica Tritta. Erica brings seventeen years of legal experience and running a small business to the ownership group. Co-Owner Bill McNamara is also a valuable member to the ownership group with his financial experience.  And Co-Owner Kim McNamara brings her prior restaurant and mother of two experience to the brewery. 


Pinette studied business, with a concentration in accounting during his undergraduate studies at Bridgewater State University.  David went on to work for some of the largest financial institutions in the world while doing investment and tax accounting.  In 2010, David decided to leave the business world and make a jump to education, where in  2017 he received a Master’s degree in education. Over seven years ago, David brewed his first batch of beer and fell in love with the process.  Since that moment, David has worked on numerous recipe creations and perfecting the process of brewing beer.  David is in charge of the general operation of the brewery.  


Erica Tritta, Esq., serves as counsel and operations director for the brewery. She has been practicing law in Massachusetts since 2007 as a sole practitioner at her own firm.  In addition to practicing law, Erica served in a consultant role for 5 years for an international Massachusetts based quick service restaurant franchise.  In her law practice, Erica works with families and individuals in Probate and Family Court and Juvenile Court. Much of Erica’s advocacy is for parents and children when the state intervenes to seek custody.

Jacob Pressy of Humboldt Regeneration Brewery & Farm earned his BS in Environmental Science with a focus on Soil Science and Alternative Agriculture and a Minor in Botany with a focus on Mycology from Humboldt State University in 2010. His experiences living in Humboldt County combined with his educational path led him to be extremely passionate about Permaculture and regenerative agriculture. Working in the wine industry when he was younger gave him a strong interest in fermentation as well as the machinery involved which eventually lead him to working as the Assistant Brewer for Eel River Brewing Co from 2001-2009.

After putting his two passions together, Humboldt Regeneration was born with a strong mission to promote regenerative land management practices using beer as a tool to reach the general public. The brewery opened in 2012 with a home-built 1bbl brew system and only a few tanks. He now operates on an artistic and efficient custom 2bbl, 4 vessel system nano-production system built by Jacob and a well known custom stainless steel fabricator who has been welding for over 60 years.

The goal for Humboldt Regeneration Brewery & Farm is to work toward becoming a carbon-positive operation while spreading the word about permaculture and regenerative agriculture.

Craig Deitz of Big Barn Brewery and Bodacious Berries Fruits and Brews. After a 32 years as a public school teacher, teaching biology, chemistry and physical sciences, As well as coaching track and cross-country. Deitz decided to put his homebrewing passion - a hobby he had enjoyed since the 1990s to professional use. 

He grew up on a farm, where the family grew fruits like cherries, peaches and apples

The brewery earned its license in 2012 and his initial goal was to grow and use everything in his beer that came from the farm.  Originally they grew five acres of malting barley in the first year but quickly realized the challenges that would entail actually malting their own grain. But they do have a couple acres of hops that they harvest and pelletize for their  beer. And they grow a variety of fruits that also make an appearance in the beers.

From celebrations around new events, to yoga, live music, crafts, and working with charities, events are commonplace again four years since the start of the COVID 19 Pandemic. This episode explores what works, what doesn’t and how can nano breweries reach new customers while keeping the existing ones.


Brian Kulbacki is a 2012 Graduate of the American Brewers Guild Brewing School, where he took their Intensive Brewing Science & Engineering course for Breweries in Planning. Prior to that he graduated from Boston College with a double major in Marketing & Finance.  He has worked in marketing for the New England Patriots/Revolution and the Lakewood BlueClaws, as well as finance for Major League Baseball and Royal Caribbean Cruise Lines. He has also managed operations for a family business. Brian founded Departed Soles Brewing Company in 2014, which in 2015 opened its doors to become the first brewery in Jersey City, New Jersey since prohibition, and the first brewery on the east coast to craft gluten free beer in dedicated equipment, along with traditional glutenous beers. The brewery has won medals at GABF, the World Beer Cup, and Best of Craft Beer Awards, among others. The brewery is now run by Brian's dog, Bogan.

Greg Fagen is Co-Founder of Heroes Brewing Company in Rochester, NY. As an avid home brewer, Greg honed his skills and passion for craft beer. He's won 10 medals as an amateur while teaming with fellow beer creators in their garages. Heroes Brewing Company opened in December 2020 after a long 6 year pilgrimage to make the  dream of owning a commercial brewery come true. Our is unique in that we partner with local charities and non-profit organizations for every beer we make and we make a donation to them from the sale of canned products. To date we have partnered with over 80 organizations who have benefited from the sale of more than 50,000 cans. 

Our philosophy is simple: Heroes don’t look like they used to. They look like you do. 



Steven Fuller has been owner of Wackadoo Brewing in Colorado for the last four years. He joined the Army at 17-year-old and spent 14 years as an active duty infantryman and 5 years as a sniper. He completed 3 tours in Iraq, was a Drill sergeant for 3 years, and now says his brewery is the only one in America to be a part of a VFW, that would be VFW 6461 in fountain Colorado.

The brewery also donates 100% of its profits every month to 11 different Veteran nonprofits or Veteran service organizations.
