RECIPE for Egg Roll in a Bowl:
1.5 lb ground turkey breast
12 oz shredded cabbage
4 cloves garlic, minced
1 tsp ginger
1/3 c soy sauce
1 Tb sesame oil
1/2 c green onions for garnish
In small bowl combine garlic, ginger, sesame oil and soy sauce, set aside.
In large skillet, brown the turkey over medium-high heat. Add the shredded cabbage and stir to combine. Add the sauce mixture to the meat and veggies. Stir and cook for about 3-5 minutes, until the cabbage has just begun to wilt but is still crunchy. Garnish with green onions if desired. Serve with cauliflower rice, brown rice or basmati rice if desired.
RECIPE for Crustless Quiche:
Heat oven to 350*F
Spray pie tin with small amount of oil
4 eggs
2 C cottage cheese (1%)
1 and 1/3 c mozzarella, reserve 1/3 c
1 tsp oregano
1/4 c Parmesan
10 oz frozen spinach (thawed and press out water)
*optional: 1/2 c diced peppers, 1/2 c diced mushrooms, 1/2 c riced cauliflower
Mix everything but 1/3 c mozzarella in bowl, stir to combine. Pour mixture into pie tin. Top with 1/3 c mozzarella.
Cook for 40-45 minutes, let rest before serving.
