🍲 Albondigas Soup Recipe
For the Meatballs:
1 lb lean ground beef
1 large egg
½ cup white onion, finely diced
¼ cup long grain white rice (uncooked)
3 garlic cloves, minced
2 tsp salt (plus more to taste)
1 tsp ground cumin
1 tsp garlic powder
½ tsp ground black pepper
½ tsp dried oregano
For the Soup:
48 oz low-sodium chicken broth
15 oz can crushed tomatoes (undrained)
3 large carrots, peeled & chopped
3–4 russet potatoes, peeled & chopped
2 zucchini, chopped into 1-inch pieces
Optional: chopped cilantro & lime wedges
Instructions:
Combine all meatball ingredients in a bowl and mix gently until combined.
Roll into 2-inch meatballs and set aside.
In a large pot, bring chicken broth and tomatoes to a boil.
Add meatballs and cook for 10 minutes. Add carrots, potatoes, and zucchini.
Simmer for 10–15 minutes until veggies are tender.
Garnish with cilantro and lime before serving. Enjoy!
