In our breakfast,

有时会吃茶叶蛋

有时(yǒu shí) 会(huì) 吃(chī) 茶叶蛋(chá yè dàn)

we sometimes eat tea eggs.

今天我们来一起做茶叶蛋吧

我们先把鸡蛋放进锅里

First, we put the eggs into a pot.

倒一些水

倒(dào) 一些(yī xiē) 水(shuǐ)

Pour in some water,

没过鸡蛋

没过(mò guò) 鸡蛋(jī dàn)

enough to cover the eggs.

开火开始煮鸡蛋

开火(kāi huǒ) 开始(kāi shǐ) 煮(zhǔ) 鸡蛋(jī dàn)

Turn on the heat and start boiling the eggs.

放入一些茶叶

放入(fàng rù) 一些(yī xiē) 茶叶(chá yè)

Add some tea leaves,

还有香料、花椒、酱油、糖

还有 (hái yǒu) 香料 (xiāng liào)、花椒 (huā jiāo)、酱油 (jiàng yóu)、糖 (táng)

There are also spices, Sichuan pepper, soy sauce, and sugar.

煮十几分钟

煮(zhǔ) 十几分钟(shí jǐ fēn zhōng)

Boil for more than ten minutes.

鸡蛋大概八九分熟了

鸡蛋(jī dàn) 大概(dà gài) 八九分熟(bā jiǔ fēn shú) 了(le)

When the eggs are about 80-90% cooked,

就关火

就(jiù) 关火(guān huǒ)

turn off the heat.

把鸡蛋一个个捞起来

把(bǎ) 鸡蛋(jī dàn) 一个个(yī gè gè) 捞起来(lāo qǐ lái)

Fish out the eggs one by one.

用勺子敲蛋壳

用(yòng) 勺子(sháo zi) 敲(qiāo) 蛋壳(dàn ké)

Tap the eggshells with a spoon,

把蛋壳敲松

把(bǎ) 蛋壳(dàn ké) 敲松(qiāo sōng)

loosen the shells.

蛋壳中间的缝隙

蛋壳(dàn ké) 中间(zhōng jiān) 的(de) 缝隙(fèng xì)

The gaps between the eggshells

可以让料汁渗进去

可以(kě yǐ) 让(ràng) 料汁(liào zhī) 渗进去(shèn jìn qù)

allow the sauce to seep in.

然后我们把鸡蛋放回锅里

然后(rán hòu) 我们(wǒ men) 把(bǎ) 鸡蛋(jī dàn) 放回(fàng huí) 锅里(guō lǐ)

Then we put the eggs back into the pot,

就这样泡一晚上

就这样(jiù zhè yàng) 泡(pào) 一晚上(yī wǎn shang)

and let them soak overnight.

早上起来加热一下

早上(zǎo shàng) 起来(qǐ lái) 加热(jiā rè) 一下(yī xià)

In the morning, heat them up a little,

and then we can enjoy the delicious tea eggs.

自己做的茶叶蛋比较清淡

Homemade tea eggs are relatively light,

口感也很嫩

and have a tender texture.

而外面买的茶叶蛋更咸

而(ér) 外面(wài miàn) 买(mǎi) 的(de) 茶叶蛋(chá yè dàn) 更(gèng) 咸(xián)

while the tea eggs bought outside are saltier,

口感也比较老

口感(kǒu gǎn) 也(yě) 比较(bǐ jiào) 老(lǎo)

with a tougher texture.

通常这锅卤水

通常(tōng cháng) 这(zhè) 锅(guō) 卤水(lǔ shuǐ)

Usually, this pot of brine

我会留着做两三次

我(wǒ) 会(huì) 留着(liú zhe) 做(zuò) 两三次(liǎng sān cì)

I keep it to make tea eggs two or three times,

之后就倒掉了

之后(zhī hòu) 就(jiù) 倒掉(dào diào) 了(le)

and then pour it out.
