Food 101
Food 101 in its fifth season, featuring Pratamesh Narvekar as my guest.
Indian cuisine is a vibrant celebration of flavor, tradition, and diversity, reflecting the country’s rich cultural tapestry. Known for its bold spices, aromatic herbs, and colorful presentation, Indian food varies widely from region to region—North India offering hearty dishes like butter chicken, naan, and rich curries, while South India is famous for its tangy dosas, coconut-based stews, and rice delicacies. Staples such as lentils, rice, and vegetables are transformed into countless dishes, each infused with spices like cumin, turmeric, coriander, and cardamom that awaken the senses. Beyond taste, Indian cuisine carries deep cultural and spiritual significance, often tied to festivals, rituals, and hospitality, where food becomes an expression of warmth, community, and heritage.

Food 101 in its fifth season, featuring Truffle Sauce,Sea Urchin Sauce and Béchamel Sauce.
Salsa Tartufata, also known as Truffle Sauce, is a luxurious Italian condiment made from a blend of earthy black or white truffles, olive oil, and often mushrooms or herbs, creating a rich, aromatic topping perfect for pasta, meats, or even as a dip. In contrast, Salsa al Riccio di Mare, or Sea Urchin Sauce, offers an oceanic depth of flavor with the delicate, briny essence of sea urchin paired with olive oil, garlic, and sometimes lemon, elevating any dish to a savory, maritime experience. Lastly, Besciamella, or Béchamel Sauce, is a classic French white sauce made from butter, flour, and milk, often infused with a touch of nutmeg and seasoned with salt and pepper, providing a creamy, velvety texture that serves as the perfect base for lasagna, gratins, or vegetable dishes. These three sauces—each distinct in flavor—bring complexity and sophistication to a wide range of culinary creations.

Food 101
Food 101 in its fifth season, featuring pistachio pesto and mezzi rigatoni .

Vibrant pistachio pesto offers a luxurious twist on the classic Genoese sauce, swapping pine nuts for the rich, subtly sweet, and uniquely verdant flavor of toasted pistachios. Blended with fresh basil, garlic, sharp pecorino or Parmesan, olive oil, and a touch of lemon zest, it creates a uniquely nutty, creamy, and intensely aromatic paste. This emerald-green pesto finds its perfect partner in mezzi rigatoni The shorter, wide tubes, with their ridges and generous opening, are engineered to capture and cradle the slightly chunky pesto pistacchio, ensuring each bite is generously coated. The result, mezzi rigatoni al pesto pistacchio, is a dish of striking visual appeal and deep, satisfying flavor – the al dente pasta providing a delightful chew against the velvety, herbaceous, and distinctly pistachio-infused sauce, often finished with a sprinkle of crushed pistachios for added crunch and visual flair.

Food 101 in its fifth season, featuring Carbonara.

Carbonara is a classic Roman pasta dish that beautifully showcases the simplicity and richness of Italian cuisine. Traditionally made with just a few ingredients—guanciale (cured pork cheek), eggs, Pecorino Romano cheese, and black pepper—carbonara captures the essence of Roman culinary heritage. Unlike versions found elsewhere that include cream, the authentic Roman carbonara relies on the creamy texture achieved by emulsifying the egg and cheese mixture with hot pasta water. Typically served with spaghetti or rigatoni, carbonara is a comforting, flavorful dish that reflects Rome’s love for hearty, satisfying meals made from humble, high-quality ingredients.

Creating a delicious smoothie is all about balancing fresh ingredients, natural sweetness, and creamy texture. Start with a base like milk, yogurt, or a dairy-free alternative such as almond or oat milk. Add your favorite fruits—bananas, berries, mangoes, or pineapples are great choices. For extra nutrition, toss in a handful of spinach, kale, or chia seeds. A spoonful of honey, maple syrup, or a few dates can add natural sweetness, while ice or frozen fruit makes it refreshingly cold and thick. Blend everything together until smooth and creamy, and enjoy a tasty, healthy treat that’s perfect any time of day!

Food 101
Food 101 in its fifth season, featuring Lindsey Masterman as my guest.

Lindsey Masterman

CEO/Founder, Cucina Fantasma

I started Cucina Fantasma to prove that plant-based comfort food can be interesting, easy, and cool. My background is a bit unexpected— while working at Boston Consulting Group, I walked into my dream Michelin-starred kitchen with no culinary experience and landed a part-time job cooking at Blue Hill.

I've always been very interested in sustainable agriculture and food systems, and my goal was to blend BCG's big-picture business thinking with Blue Hill's ethos to create my own venture centered around sustainable food. After two years of working 70 hour weeks in consulting, plus an extra 12 hours at Blue Hill, I burnt out pretty hard.

Complementing this dish is a golden roasted chicken, seasoned to perfection, offering a juicy, savory bite in every forkful. Served alongside is a crisp, refreshing salad made with fresh greens and shavings of sharp pecorino cheese, which adds a salty depth and balances the richness of the meats. This combination creates a harmonious and satisfying meal, perfect for any dinner gathering or a refined weekday treat.

Food 101 in its fifth season, featuring Chef Alessandro Panattoni as my co-host.

Chef Alessandro Panattoni, known as the host of Food 101 , swears by the elegance of simplicity in flavor. His top recommendations? A rich, tender olive oil cake that melts on the tongue, perfectly paired with his house-made lemon marmalade — bright, tangy, and just sweet enough to awaken the senses. To round out any savory dish, he suggests his signature honey miso dressing, a harmonious blend of umami depth and natural sweetness that elevates everything from salads to roasted vegetables.

Cooking rice and pasta perfectly is all about timing, technique, and a little bit of patience. For rice, start by rinsing it thoroughly to remove excess starch, which helps achieve a fluffy texture. Use the right water-to-rice ratio (typically 2:1 for white rice), bring it to a boil, then reduce the heat to low, cover, and let it simmer without stirring until the water is fully absorbed. For pasta, bring a large pot of salted water to a rolling boil before adding the noodles. Stir occasionally to prevent sticking, and cook until just al dente—tender but with a slight bite. Drain quickly and avoid rinsing if you’re serving with sauce, as the starch helps the sauce cling to the pasta. With a bit of care, both rice and pasta can turn out perfectly every time.

Cooking eggs properly depends on the dish and desired texture. For a perfect fried egg, heat a nonstick pan over medium-low heat, add a small amount of butter or oil, and cook until the whites are set while keeping the yolk runny or firm as preferred. Scrambled eggs should be cooked over low heat with butter, stirred gently to achieve a soft, creamy texture. For poached eggs, simmer water with a splash of vinegar, create a gentle whirlpool, and carefully drop the egg in, cooking for about 3-4 minutes for a runny yolk. Hard-boiled eggs require submerging eggs in cold water, bringing them to a boil, then simmering for about 9-12 minutes before transferring them to an ice bath. Soft-boiled eggs follow the same process but are cooked for only 4-6 minutes for a jammy center. In omelets, whisked eggs are cooked slowly in butter until set, then folded over fillings like cheese or vegetables. Mastering these techniques ensures eggs are cooked to perfection in any dish.
