On this episode, our dietetic students had the pleasure of interviewing Diana Mesa. Diana is a registered dietitian certified as a Diabetes Care and Education Specialist well known for using cultural competency, food freedom, and social determinants of health as foundations in her practice. She runs a private practice called En La Mesa Nutrition in which she works mostly with Latinos and Cubans. Ashley earned her Bachelor of Science degree from Florida State University in Dietetics with a minor in Religion and is currently pursuing her Masters in Dietetics with a concentration in Health Informatics. Ashley and Jasmine Westbrook, her co-founder of EatWell Exchange, noticed there needed to be a stronger bridge between nutrition education and cultural competence and as a result started Eatwell Exchange. Eatwell Exchange is a nonprofit organization serving those in the Miami community by emphasizing the importance of their cultural background and providing nutrition education to support their well-being.
