The Feast of Unleavened Bread is mentioned a lot around the time of Jesus's crucifixion. Understanding it's timing is crucial to keeping track of the timing of things. Since God put all those time markers in there, it seems like it is worth paying attention. Leaven is mentioned in other significant ways in both Old and New Testament. From its institution, the Passover was open for anyone who trusted in Yahweh to celebrate. There was only one requirement and it wasn't being descended from Israel. However, Israel is obviously still chosen as part of the celebration because of where the Passover was to be celebrated, a mysterious place until they entered the Promised Land. Also, there is a surprising link between Passover and Joseph of Arimathea found in Numbers 9:10.

The word Sabbath is actually generic in and of itself. It becomes important when you add the description "of the LORD." Similarly, the feasts are important because Yahweh sets them out, both for remembrance and to point to Jesus. But they haven't all been fulfilled yet!
