This week on the Sapore Podcast, I’m joined by Gianni Morosini—a natural wine sommelier in Florence’s evolving food and wine scene.

After living sober until the age of 40, Gianni discovered the world of natural wine and never looked back. What began as a quiet curiosity has become a full-hearted philosophy rooted in slowness, storytelling, and a reverence for the land.


We first met at a restaurant tucked away in Oltrano in Florence, Italy, where Gianni’s intuitive and enthusiastic approach to wine left a lasting impression—curating wine lists, collaborating with producers, and introducing others to the wild, beautiful world of natural wine.


In this conversation, we talk about:

    • His unlikely journey into the world of wine at 40
    • Why natural wine resonated so deeply with him
    • How he selects bottles based on quality, sustainability, emotional connection, and land stewardship
    • Why slowness, presence, and care matter more than perfection
    • The magic of tasting wine with someone who truly sees it as a living thing



In the second half of the episode, we taste a variety of natural wines together—each one carrying a story of land, time, and intention:

    • A wine aged underground in volcanic terrain
    • A bottle infused with bee pollen and honey
    • Producers reimagining what wine can be when we listen to nature


This episode is a meditation on taste, transformation, and the soulful beauty of drinking close to the earth.
