Well, it wouldn't really be a celebration of anime in the west without a Miyazaki film. What better film to choose other than Hayao's first original film creation, "Nausicaa of the Valley of the Wind" from 1984. Even though this isn't his directorial debut, it is the first movie to really lay out his themes and scriptwriting tropes as well as Studio Ghibli's (in this case Topcraft's) future animation techniques.
