In this episode, Chris chats with respected Nigerian chef and cookbook author Tomi Makanjuola, originally from Lagos, known as The Vegan Nigerian. The pair discuss some of Western Africa’s most famous dishes, how to cook with plantains, as well as some delicious health-boosting ingredients like fonio (acha) and their benefits.
