Today’s episode is recorded from Nam Mushroom Farm, Lisbon, Portugal and follows a story of mushrooms, sustainability and urban farming.

We recorded on-site, learning how coffee waste was repurposed and utilised in growing mushrooms and the journey to harvest.

Nam supplies leading restaurants across Lisbon, and we felt grateful to explore and see the process first hand.
