Enjoy cooking a balanced North Indian Vegan meal consisting of cauliflower potato side, Green gram dal Curry, Roti and Rice. Green gram dal Curry
Onion - 1 medium sized
Tomato- 1 chopped
Ginger Garlic paste- 2 teaspoon
Cumin seeds- 1 Teaspoon
Turmeric powder- 1 teaspoon
Cumin powder- 1 teaspoon
Garam masala/all spice powder- 1 Teaspoon
Salt to taste
Water-1/4 cup+ more to dilute if the dal curry is too thick
Cauliflower Potato side
Cauliflower - half of one medium head
Potato- 1 large potato
Cumin seeds- 1 teaspoon
Oil- 1 tablespoon
Cumin powder -1 teaspoon
Coriander powder - 1 teaspoon
Turmeric powder - 1 teaspoon
Water- 1/4 cup or as required until the verges turn tender
Roti
Whole wheat flour- 1 cup
Salt- 1 teaspoon
Water- as required
Rice
Basmati/ponni/sona masoori- 1 cup
Water 2-3 cups
