No episódio de hoje, A manteiga é um produto lácteo feito de creme de leite fresco batido, e consiste principalmente de água e proteínas do leite. A manteiga desempenha um papel importante em muitas receitas, mas quando usada para refogar ou fritar, pode queimar rapidamente. Isso acontece porque os sólidos do leite queimam facilmente acima de 175°C e considerando as tarefas da cozinha, é uma temperatura bastante baixa para a maioria das aplicações culinárias. É aqui que entra a manteiga clarificada.
